Every house beer begins and ends as a one-barrel batch. That is ultra-small by commercial standards—and deliberate. It preserves the experimental spirit of serious homebrew while adding professional controls, carefully selected ingredients, and the consistency a taproom pour deserves.
Built around the beer, not volume
Premium quality starts before the first grain hits the water.
Our brewing water is purified with reverse osmosis, then rebuilt with minerals chosen for the style. A crisp lager and a bold IPA should not begin with the same water, so they do not.
Each batch also gets the yeast strain the recipe calls for, sourced fresh from specialized labs. Small scale lets us make those choices without forcing every beer through the same production shortcut.
